Saucy Cajun Greens

Ingredients:

¼ c sunflower seed butter (or any nut/ seed butter)

¼ c olive oil

¼ c lemon juice

1 ½ tsp Cayenne Pepper and Sea Salt

½ tsp turmeric powder

¾ tsp cumin

¼ tsp onion powder

¼ tsp garlic powder

Black pepper to taste

1 head of greens of choice, or a mixture (collards, kale, Swiss chard, mustard greens, etc)

Preparation:

1. Whisk everything together except the greens

2. Combine the greens and the sauce in a large bowl.  Mix and mash until the greens are coated and soft.

Note:  If you do not have nut butter it will make a thinner dressing.

Amazing Raw “Peanut” Sauce

Makes 2 cups

Ingredients:

1 cup  raw Almond Butter

2 Tbl    fresh ginger, whole or chopped

½ cup water (to thin)

4 Tbl    fresh lemon juice

¼ cup maple syrup

3 Tbl    Nam Shoyu soy sauce

4 tsp    sesame oil

2-3       cloves garlic

½         Serrano or jalapeno chile.

Preparation:

Blend all ingredients at high speed until smooth.  This makes an unbelievable dipping sauce for carrots or other veggies, and it tastes amazing as a salad dressing or a sauce over young coconut noodles.
